On-the-Go Sloppy Joe

This vegetarian version of sloppy joes replaces meat with red lentils and mushrooms. The variety of spices make the low amount of sugar almost unnoticable.

Ingredients

2 tsp. vegetable oil
1/4 cup onions, chopped
1/4 cup red pepper, chopped
1/4 tbsp. celery, chopped
1/4 tsp. garlic powder
1/4 tsp. mustard powder
1 tsp. paprika
3 tbsp. tomato paste
1 tbsp. vegan Worcestershire sauce
1 tbsp. apple cider vinegar
3 tbsp. canned tomato puree
6 cups water
1 1/3 cups red lentils
3/4 cup sliced mushrooms
2 tsp. brown sugar
1/8 tsp. ground black pepper
1 tsp. salt
1/2 tsp. cornstarch
10 whole-wheat hamburger rolls

Steps

1. In large pot over medium-high heat, add oil and saute onions, peppers and celery. Add garlic powder, mustard powder and paprika, and stir in well. Add tomato paste and cook until tomato crust develops on the pan.

2. Add Worcestershire, apple cider vinegar, tomato puree, water, lentils, mushrooms, sugar, black pepper and salt. Simmer for approximately 35 minutes, stirring occasionally, until lentils are tender.

3. In small bowl, combine cornstarch and 1 tablespoon water to make cornstarch slurry. Add slurry to lentils and cook for 3-4 minutes.

4. Serve 1/2 cup (4 ounces) on a whole-wheat bun.
