Pickling vegetables is easy with this traditional Romanian recipe.

Ingredients

1 red pepper, cut into large strips
1/2 head red cabbage, quartered
1 head cauliflower florets
1 eggplant, peeled, cut into 2-in. dice
1 carrot, cut into 3-in. sticks
1 cucumber, seeded, cut into 3-in. sticks
3 tomato, quartered
1 horseradish root, cut into 3-in. sticks
3 cups white sugar
1 cup salt
4 cups white vinegar
1 gal. water
3 tbsp. mustard seed
6 garlic cloves, whole
1 onion, julienned 
4 bay leaves
6 to 8 thyme springs
1 tbsp. peppercorn

Steps

  1. Cut vegetables and set aside.

  2. Combine sugar, salt, vinegar and water in large stockpot. Bring to a boil then set aside to cool.

  3. In large terra cotta pickling vessel or large canning jars, layer vegetables evenly.

  4. Top vegetables with mustard seed, garlic cloves, onion, bay leaves, thyme and peppercorn. Pour pickling liquid over top of vegetables.

  5. Cover and store in refrigerator for 72 hours.
