A zesty citrus marinade tenderizes skirt steak before grilling. Yuca fries with garlic mayonnaise for dipping accompany the sizzling steak.

Ingredients

8 limes, juiced
8 oranges, juiced
6 cloves garlic, crushed
1 cup cilantro, chopped
2 tbsp. cumin, ground
4 tsp. chiles, dried
8 6-8-oz. skirt steaks
6 garlic cloves, roasted
1 cup mayonnaise
2 lb. yuca, peeled, cut for fries
Canola oil, as needed for frying
 

Steps

1. In a bowl, combine juice, crushed garlic, cilantro, cumin and chiles. Marinate steaks in mixture at least 30 min.

2. In a separate bowl, coarsely mash roasted garlic. Mix in mayonnaise and season to taste. Reserve chilled.

3. In a large pot or deep fryer, heat oil until very hot. Fry yuca fries until golden brown and drain.

4. Remove steaks from marinade and pat dry. Grill to desired doneness. Top with cilantro and serve with yuca frites and garlic mayonnaise.
