Meatballs in Plum Sauce 2009

YIELD: 24 servings (4 meatballs each)

2 lbs., 8 oz. ground turkey
2 lbs., 8 oz. mild Italian sausage
5 oz. onion, finely diced
2 oz. ginger, minced
2 oz. garlic, minced
½ cup cilantro, chopped
½ cup Kikkoman Soy Sauce
2 eggs
2 Tbsps. salt
vegetable oil, as needed
6 cups Kikkoman Plum Sauce
24 cups cooked white rice

1. For meatballs: In a bowl, mix together turkey, sausage, onion, ginger, garlic, cilantro, soy sauce, eggs and salt until well blended. Form mixture into 1 oz. balls.

2. Heat oil in heavy sauté pan; brown meatballs on all sides. As they brown, transfer meatballs to large rondo.

3. Add plum sauce to rondo; bring to a simmer over medium heat. Simmer, covered for about 5 minutes or until meatballs are cooked through.

4. For each serving, to order: Heat 4 meatballs in ¼ cup sauce. Place 1 cup scoop rice on plate; place meatballs alongside. Pour sauce over meatballs and garnish with cilantro leaves.
