If customers are getting bored of the standard yogurt-fruit parfait, add an ethnic twist to the recipe. By stirring ground cardamom and chopped pistachios into vanilla yogurt, the parfait takes on an Indian accent that is intensified by chopped fresh mango. Layer the ingredients in a plastic cup with a domed lid for easy portability.

Ingredients

2 cups lowfat vanilla yogurt
5 tbsp. pistachios, toasted and finely chopped, divided
1/2 tsp. ground cardamom
1 lb., 14 oz. fresh mango, diced 1/2 inch

Steps

1. In bowl, combine yogurt with 4 tablespoons pistachios and cardamom; refrigerate until ready to use.
2. Into each 9-ounce clear plastic cup, layer 3 ounces mango, 3 tablespoons yogurt mixture, 2 ounces mango and 3 tablespoons yogurt. Sprinkle with 1/2 teaspoon pistachios. Place dome lid on cup. Hold in refrigerated display case.
