The name of this drink comes from Norse mythology. Loki, known as the “trickster god,” insulted the goddess Odin at a party and a quarrel ensued. Loki is then chased by the gods and tries to escape by disguising himself as a salmon. At MC Kitchen, a hot new restaurant in Miami’s Design District run by chef Dena Marino, craft beer cocktails are a specialty. This one is poured over salmon caviar to reflect Loki’s ploy.

Ingredients

1/2 Meyer lemon, thinly sliced into wheels
1/3 cucumber, thinly sliced into wheels
12 oz. Dogfish Head Saison du Buff craft beer
5 salmon caviar pieces

Steps

  1. Alternate slices of lemon and cucumber in an infusing jar. Pour in beer and infuse 3-5 min.

  2.  Place caviar pieces in a large snifter. Strain infused beer into snifter. Serve immediately.
