This bomb explodes with flavor. A grilled sandwich of tender, sliced lamb is served on a Portuguese muffin. The chilies add heat and the melted cheese provides just the right amount of ooze.

Ingredients

1⁄4 cup sautéed onions
1⁄3 lb. thinly sliced, rare roast leg of lamb
Diced serrano chile pepper, to taste
1 lime, juiced
Caribbean-style hot sauce, to taste
1 bolo levedo (Portuguese muffin; see note) or sandwich-size English muffin, split
1⁄4 cup shredded mozzarella cheese
2 tbsp. garlic butter

Note: Similar in shape to an English muffin, but slightly sweet.

Steps

1. Heat sautéed onions in a skillet or on a griddle; add sliced lamb, serrano pepper, lime juice, and hot sauce and heat through.

2. Meanwhile, sprinkle shredded cheese on bottom of muffin; grill or griddle in garlic butter, along with the top, until muffin is crisp and cheese is melted.

3. Place lamb mixture on top of muffin half with cheese; close sandwich and serve immediately.
