Kobe beef is considered by many to be the best form of beef available. This burger pairs Kobe beef with Tillamook cheddar, Swiss cheeses, smoked bacon and Roasted Onion Mayo on a ciabatta bun.

Ingredients

8 oz. American Kobe beef, coarsely ground
1 oz. Tillamook cheddar cheese
1 oz. Swiss cheese
Ciabatta bun
Butter
2 strips smoked bacon, cooked
2 tomato slices
Lettuce leaves
Roasted Onion Mayo (recipe follows)

Roasted Onion Mayo:
2 sweet onions
1 1⁄2-2 cups mayonnaise
Salt and pepper, to taste

Steps

1. Lightly form beef into a thick patty. Sear on hot applewood grill until internal temperature reaches 120°F, turning once. Top burger with cheeses and heat until melted.

2. Split ciabatta bun and lightly butter. Grill until toasted. Serve burger on bun, topped with lettuce, tomato, bacon, and onion mayo.

Roasted Onion Mayo:

1. Roast onions in 400°F oven until caramelized and softened. Let cool.
2. Peel onions and dice or sliver. Stir onions into enough mayonnaise to form a thick sauce.

Yield: About 3 cups.
