"Our meatloaf is one of the most requested items," says executive chef of Kate Mantilini—named after a famous prizefighter—David Lewis.

Ingredients

1 lb. ground pork
1 lb. ground beef
1 cup fresh breadcrumbs
2 eggs, beaten
1⁄3 cup milk
1⁄3 cup minced parsley
Minced garlic, salt, pepper, and seasonings, to taste
1⁄2 cup ketchup
2 tbsp. tomato paste
2 tbsp. brown sugar
1 tsp. Worcestershire sauce
 

Steps

1. In a large bowl, combine pork, beef, and breadcrumbs. Beat eggs with milk; add to meat mixture along with parsley, garlic, salt, pepper, and seasonings of your choice. Mix lightly; do not handle too much or meat loaf will get too dense.

2. Preheat oven to 350°F. In a shallow baking pan, pat and form meat mixture into a loaf shape. Bake 1 hr.

3. Reduce oven temperature to 325°F. Combine ketchup, tomato paste, brown sugar, and Worcestershire; spread over top of meat loaf. Bake 30 min.-1 hr. longer, or until meat thermometer inserted in center registers 155°F.
