Salmon tartare is infused with the distinctive flavor of Indian seasonings. The apples, bananas, and cucumbers add a sweet, fresh flavor.

Ingredients

Curry mayonnaise:
2 tsp. vegetable oil
2 tbsp. onion, finely diced
2 tbsp. apple, peeled and finely chopped
2 bananas, finely chopped
6 tbsp. warm water
4 tsp. curry powder
6 tbsp. mayonnaise
2 tbsp. sour cream
Salt and pepper

Tartare:
24 oz. salmon, skinned and boned, 1⁄4-dice
2 oz. cucumber, 1⁄4-in. dice
2 1⁄2 tbsp. curry mayonnaise
20 chives, thinly sliced, (reserve 1⁄2 for garnish)
1 lemon, freshly squeezed
Hot sauce, as needed
Salt
 

Steps

1. In a small pot, heat oil and cook onions until soft, about 2 min. Add apples and bananas and cook 4-5 min. more, stirring continuously.

2. Add water and cook 4 min. longer. Allow to cool and add mayonnaise, sour cream, salt and pepper. Transfer to blender and mix until smooth, adding water if necessary.

3. In a large, cold bowl, combine tartare ingredients and mix well with a cold spoon. Chill until ready to plate.

4. Serve tartare on fried Indian pappadams (can be purchased at an Indian grocery), sprinkle with reserved chives, and serve with curry mayonnaise.
