Flat iron steak gets some flavor contrast thanks to a tangy glaze and a sweet and spicy vegetable side. 

Ingredients

Honey vinegar glaze
2 oz. shallot
3 tbsp. apple cider vinegar
1/2 c. raw blackberry honey

Sweet potato and asparagus
2 sweet potatoes
2 bunches asparagus
1 tsp. orange blossom honey
1 tsp. cayenne pepper

6 flat iron steaks, 7 oz. 
1/4 c. eucalyptus honey
3 tbsp. prepared coffee
Cilantro sprigs
 

Steps

1. Saute shallots. 
2. Add vinegar. 
3. Reduce by 1/3. 
4. Marinate steak with coffee and honey. 
5. Air dry for 1/2 hour. 
6. Saute sweet potatoes over high heat for 6 minutes.
7. Toss with asparagus, salt and honey. 
8. Season with salt and pepper. 
9. Roast for 15-20 mins. 
6. Pan sear and roast steak for 14 minutes until medium-rare.
7. Place sweet potato and asparagus on bottom of plate. 
8. Slice and fan steak. 
9. Put glaze on top. 
10. Add sprigs of cilantro to garnish.
