An enticing shrimp curry tops simply prepared halibut. The fish fillets are wrapped in banana leaves and steamed. The tasty curry is served over the fish along with rice and plantain chips.

Ingredients

1 tbsp. oil
1 large onion, chopped
1 jalapeño, julienned
3 garlic cloves, minced
2 tbsp. curry powder
1⁄2 lb. bay shrimp, cleaned, peeled
1 bunch scallions, sliced
1 cup tomatoes, chopped
1 cup chicken broth
1 cup coconut milk
Juice of 2 limes
Fresh cilantro, as needed
8 6-oz. halibut fillets
8 banana leaves
8 cups rice, cooked
 

Steps

1. In a saucepan, heat oil and sauté onion until translucent. Add jalapeño, garlic and curry powder and sauté 3 min.

2. Add tomatoes and scallions and heat through. Stir in broth, coconut milk and lime juice. Simmer approx. 10 min. Add shrimp and cook, stirring, about 5 min.; add 1⁄4 cup chopped cilantro. Reserve hot.

3. Season halibut fillets with salt and pepper. Wrap in banana leaves and steam approx. 8 min., just until flaky.

4. Place halibut on a bed of rice and open banana leaves slightly. Spoon curry over top; garnish with fried plantain chips, cilantro and toasted coconut.
