At Elixir, mixologist Ehrmann uses a bottled cucumber-flavored vodka as a base, adding avocado, pineapple juice, ginger and cilantro to create a well-balanced cocktail. Agave nectar provides natural sweetness. The fresh green color and combination of ingredients makes for an especially refreshing summer cocktail that can serve as an alternative to the ubiquitous margarita or mojito. 

Ingredients

4 heaping bar spoons mashed avocado
1/4 tsp. minced cilantro
3 pieces fresh ginger (1/2-in. each)
1 1/2 oz. cucumber-flavored vodka
1 oz. lemon juice
1 oz. pineapple juice
1 oz. agave nectar
Fresh avocado slices and cilantro sprigs, for garnish

Steps

  1. Muddle mashed avocado, cilantro and ginger in bottom of cocktail shaker glass.

  2. Add vodka, lemon juice, pineapple juice and agave nectar; shake well.

  3. Double strain over fresh ice cubes in tall glass. Garnish with avocado and cilantro.
