Grilled Tropicale Turkey Bites with Habanero & Mango Dipping Sauce

YIELD: 12-15 servings

For the turkey bites:
6 lemongrass stalks, cut into quarters lengthwise
2 lbs. ground turkey
1 Tbsp. mango pulp
1 Tbsp. lime zest
6 Tbsps. coconut, shredded and unsweetened
2 Tbsps. cilantro, chopped fine
1 ½ Tbsps. honey
1 ½ Tbsps. Tabasco sauce
1 tsp. nutmeg
olive oil, for brushing
fresh lime slices, for garnish
grilled sugarcane, for garnish

For the sauce:
½ cup mango pulp
3 Tbsps. Tabasco Habanero sauce
½ cup yogurt

1. For the turkey bites: soak lemongrass in water for 30 minutes; pat dry.

2. Mix remaining turkey bites ingredients except olive oil in bowl. Mold a tablespoon of mixture around lemongrass stalk using wet hands, and refrigerate for 30 minutes.

3. Brush ridged grill pan with olive oil. Cook the bites for about 8-10 minutes or until cooked, turning occasionally.

4. For the sauce, mix all ingredients thoroughly.

5. To serve, arrange turkey bites on plate, with dipping sauce on the side. Garnish with fresh lime slices and grilled sugarcane.
