Grapefruit Glazed Salmon 2010

The sharp citrus tang of grapefruit meets the smokey flavor of grilled salmon. Grilled fillets are finished with a grapefruit glaze and served with grilled grapefruit slices.

Ingredients

3 cups freshly squeezed grapefruit juice
6 tbsp. balsamic vinegar
6 tbsp. brown sugar
12 (6 oz.) salmon fillets
1 1⁄2 tsp. pepper
24 grapefruit slices, about -1⁄2 in. thick
1⁄2 tsp. salt

Steps

1. Combine grapefruit juice, balsamic vinegar, and brown sugar in med. saucepan. Boil until reduced by half, about 15 min. Hold warm.

2. Per serving: Season one salmon fillet with 1⁄16 tsp. salt and 1⁄16 tsp. pepper. Grill salmon 5-10 min., until just done in center. Brush salmon with 1 tbsp. grapefruit glaze during grilling and just before removing from grill.

3. Lightly grill 2 grapefruit slices; place on plate and top with salmon fillet. Drizzle 1 tbsp. glaze on top of salmon.
