These grilled pork chops are a mouth-watering treat. Ginger flavors the chops and the delectable cherry-orange sauce is a great match for the well-flavored meat.

Ingredients

1⁄2 cup lemon juice
1⁄2 cup chicken broth
1⁄2 cup soy sauce
2 tbsp. ginger, grated
2 tbsp. dry mustard
3 garlic cloves, crushed
1⁄4 tsp. cayenne pepper
1 2 8-oz. pork rib chops
1 1⁄2 cups orange juice
2 tbsp. cornstarch
1 1⁄2 cups onion, chopped
3 tsp. vegetable oil
1 1⁄2 tsp. curry powder
1 1⁄2 cups chicken stock
1 cup dried cherries
 

Steps

1. In a medium bowl, combine lemon juice, chicken broth, soy sauce, ginger, mustard, garlic and cayenne pepper. Marinate chops in refrigerator for 8 hr. or overnight.

2. In a separate bowl, whisk together 2 tbsp. orange juice with cornstarch and reserve. In a medium saucepan, sauté onion in oil; stir in curry powder. Add stock and remaining orange juice to pan, stirring. Stir in cornstarch mixture and cook over medium heat until thickened slightly. Stir in dried cherries and simmer 2-3 min. Reserve.

3. Remove chops from marinade and pat dry. Grill to medium doneness, approx. 10-13 min., turning once.

4. Ladle sauce onto plates and top with chops. Garnish with additional dried cherries, if desired.
