Jon Karel

Buffalo Proper

Buffalo, N.Y.

Buffalo Proper owner Jon Karel gives the Brazilian caipirinha a spicy twist with flavors of ginger and jalapeno from a housemade cordial. The tannin from the grapes balances the sweetness of the cordial without raising the acidity of the cocktail. Karel named the drink after Ginger Baker, the legendary drummer of rock band Cream.

Ingredients

2 oz. cachaca

1 oz. fresh lime juice

¾ oz. ginger-jalapeno cordial

6 whole red seedless grapes

Ice cubes

Red grapes and lime peel, for garnish

Steps

  1. In cocktail shaker filled with ice, combine cachaca, lime juice, cordial and 6 red grapes. Shake well.

  2. Pour contents into serving glass over ice. Garnish with a grape and lime peel.
