These individual fruit pizzas use English muffins for their crusts, and also feature reduced-fat strawberry cream cheese as “pizza sauce.”
Recipe by Hillsborough County School District, Tampa, Fla.
10 whole-wheat English muffins
20 oz. reduced-fat strawberry cream cheese
5 cups sliced fruit (grapes, orange segments and strawberries)
1. Toast English muffins at 325 F for 3 to 5 minutes; allow to cool at room temperature.
2. Split English muffins in half and spread 1 ounce cream cheese on each half, followed by 1/4 cup fruit on each half.
