This crisp, thin crust pizza is extraordinary. Lavishly topped with caramelized onions, bacon and cheese, this pie is sure to please.

Ingredients

5 tbsp. butter
3 cups leeks, thinly sliced
1⁄2 tsp. sugar
2 cups red onions, thinly sliced
2 cups yellow onions, thinly sliced
1 1⁄2 cups beef stock
1⁄4 cup brandy
Pizza dough, for 2, 14-in pizzas
1⁄2 lb. bacon, fried and crumbled into 1⁄4-in. pieces
4 cups Gruyère, grated
 

Steps

1. In a large pan, melt 3 tbsp. butter and add leeks. Add sugar and onions and continue to cook until caramelized.

2. Add beef stock to pan and reduce by half. Add brandy and continue to reduce until almost all liquid has evaporated.

3. Roll out both pieces of pizza dough and divide onion mixture evenly.

4. Top both crusts with bacon and cheese; bake until crust is golden.
