Make the most of the fall havest with this sweet maple chicken. Butternut squash and a duo of potatoes round out the dish.

Ingredients

1 1/4 each onion, chopped
1/4 cup, 2 1/2 tsp. canola/olive oil blend
1/4 tsp. pepper
3/4 cup maple syrup
4 grams fresh thyme
2 lb., 6 1/3 oz. cubed butternut squash
1 lb., 3 1/4 oz. red bliss potatoes
2 1/3 each sweet potatoes
7 lb., 8 oz. chicken tenderloin

Steps

  1. Mix all ingredients, saving a little maple syrup, in Lexan.

  2. Scoop from Lexan into roasting pan.

  3. Par cook sweet potato and regular potato.

  4. Cook all ingredients 30 to 40 minutes at 350°F, stirring halfway through.

  5. Drizzle reserved maple syrup on final product.
