Dijon Roasted Pork Loin

Dijon mustard gives this pork loin a little something extra, along with minced garlic, brown sugar and chili garlic paste.

Ingredients

1 pork loin
2 oz. minced garlic
1 tbsp. kosher salt
1 tbsp. black pepper
1⁄2 cup Dijon mustard
1⁄4 cup brown sugar
1 tbsp. chili garlic paste
1 tbsp. orange zest

Steps

1. Separate loin into two pieces.

2. Blend rest of ingredients to make paste. Spread paste over entire roast.

3. Place meat on rack in 4-in. hotel pan. Cover with parchment and foil. Bake at 350°F for 45 minutes.

4. Remove foil and parchment. Roast for 15 to 20 minutes, or until internal temperature reaches 155°F. Remove from oven, cover lightly with foil and let rest for 20 minutes. Carve as needed.
