At Piada Italian Street Food, a fast-casual chain based in Columbus, Ohio, pasta appears on the menu in various shapes and formats. In this recipe, chef Matt Harding uses spaghetti rigati, a ridged pasta that’s designed to better hold the spicy tomato sauce. On Oct. 17 of this year, designated as National Pasta Day, Piada introduced a second dish made with rigati—Date Night Pasta—which features a creamy sauce. 
 

Ingredients

1 lb. spaghetti rigati
2 cups diavolo sauce (tomato-based spaghetti sauce with chili peppers)
1 cup bruschetta tomatoes
½ cup sliced green onions
Grated Parmesan cheese

Steps

1. Cook pasta in boiling water until al dente; drain and keep warm.
2. Meanwhile, in saucepan, heat diavolo sauce until simmering. Toss pasta with sauce and bruschetta.
3. To serve, portion pasta into bowls; top with green onions and grated Parmesan.
