Cucumbers are one of those vegetables that have been increasingly showing up in garden-to-bar cocktails. Their bracing flavor and texture is especially compatible with gin drinks. Drew Kim, a partner in Matchbox restaurants, soaks sliced cukes in gin for a week, then uses the infused spirit as the base for an invigorating gin and tonic.

Ingredients

3 cucumber slices
2 lime wedges
2 oz. cucumber gin infusion (recipe below)
Tonic water
Freshly ground black pepper

Steps

  1. In rocks glass, muddle 2 slices cucumber with lime wedges. Add cucumber gin infusion and stir.

  2. Fill glass with ice cubes and tonic water. Garnish with a cucumber slice and ground pepper.

Cucumber Gin Infusion
12 liters gin
12 English cucumbers, sliced into 1-in. rounds

In extra-large beverage dispenser or container, add cucumbers to gin. Let sit for up to 1 week to blend flavors.
