YIELD: 10 SERVINGS
1¼ lbs. Alaska king crabmeat
¼ cup olive oil
¼ cup small-dice red onion
¼ cup lime juice
1 Tbsp. oregano
Sugar, as needed
Salt and pepper, as needed
50 plantain chips, fried, smashed and fried again
Avocado-papaya relish, as needed
1. Gently fold together crabmeat, olive oil, red onion, lime juice and oregano. Adjust seasoning to taste with sugar, salt and pepper.
2. Top each tostone with crab mixture and avocado-papaya relish.
