A scrumptious and spicy quesadilla is filled with crab, spinach, cheese and black beans. Grilled until the cheese begins to melt and garnished with sour cream this makes a great appetizer.

Ingredients

8 oz. crab meat
8 large flour tortillas
1 4.5 oz. can green chilies
2 tbsp. cilantro, finely chopped
2 green onions, chopped
1 can black beans
8 oz. shredded Monterey Jack Cheese
1 10 oz. box of frozen chopped spinach, thawed
Cumin, to taste
Salt and pepper, to taste
Chili powder, to taste
Sour Cream, for garnish

Steps

1. Heat a large non-stick skillet over medium-high heat. Lightly oil skillet. Place a tortilla in skillet. Sprinkle some cheese evenly over top of the tortilla, followed by some chilies, crab meat, green onions, spinach, and black beans.

2. Sprinkle cumin, cilantro, chili powder, salt, and pepper to taste. Allow to cook for 2-3 minutes or until tortilla browns and cheese begins to melt.

3. Carefully fold tortilla in half and turn over and cook second side until lightly browned and cheese is thoroughly melted.

4. Garnish with sour cream. Repeat for all tortillas.
