Authentic and refreshing, this soft serve gelato features two signature ingredients of Indian cuisine – coconut and lemongrass.
2500g whole milk
500g heavy cream
200g lemongrass, finely chopped
50g PreGel Lemon 50 Powdered Flavor
1 bag PreGel Coconut Super Sprint
Combine all ingredients and mix well with an immersion blender.
Allow to age for at least 2 hours in refrigerator (age overnight for best results).
Mix again with immersion blender.
Use as needed in soft serve machine.
