Quinoa adds a health factor to this sweet treat.
1 cup quinoa
3 tbsp. cocoa
1 ½ cups water
1 tbsp. Truvia sweetener
¼ cup vanilla yogurt
4 strawberries, sliced
4 mint leaves
Put quinoa, cocoa, water and sweetener in pan. Bring to a boil, then cover and let stand for 10 minutes. Fluff with fork and cool in walk-in.
In dessert cup, layer quinoa mix, yogurt, then quinoa mix. Place strawberry slice on inside edge of dessert cup, and garnish with mint leaf.
