These Citrus Scallops bring a unique taste to the classic scallop dish. Featuring blood orange juice and Key lime juice, these scallops make for a flavorful seasonal dish.

Ingredients

8 tbsp. clarified butter
64 oz. bay scallops
8 tbsp. Grand Marnier
8 tbsp. Key lime juice
4 blood orange, juice only (use rest of orange for garnish)
8 tbsp. chopped parsley
Salt if desired

Steps

  1. Melt butter in medium sauté pan over high heat.

  2. Add scallops and sauté until no longer opaque, 5 to 7 minutes depending on size of scallops.

  3. Add Grand Marnier and sauté 30 seconds.

  4. Add juices and sauté 30 seconds.

  5. Remove from heat, stir in parsley and salt if used.
