Choo Chee is a well-known flavor for curries, especially using seafood, in Thailand. This version features salmon lemon grass, kaffir lime and red chiles.

Ingredients

23.75 lbs. salmon, cut into steaks
1.65 lbs. lemon grass, cut
0.39 gal. vegetable oil
8.25 lbs. choo chee chili paste
1.95 gal. coconut milk
0.39 gal. fish sauce
1.65 lbs. granulated sugar
0.83 lb. kaffir lime leaf, thinly sliced
0.83 lb. red chiles, sliced

Steps

1. Steam salmon with lemon grass until cooked through. Place on serving plate.

2. Warm vegetable oil in nonstick pan; add chili paste and stir. Add coconut milk; stir to mix for 2 to 3 mins. Add fish sauce, sugar and kaffir lime leaves, mix.

3. Pour mixture over steamed salmon steak. Sprinkle with red chiles and serve.
