Barbequed chicken and ribs and grilled steak and seafood figure prominently on Dave & Buster’s menu. Settembre developed a signature Black Jack sweet BBQ sauce spiked with Jack Daniel’s for several of the entrees, as well as this hot-sweet honey-based recipe spiced with chipotles. Slather the sauce on to enhance beef, pork, poultry or even salmon.

Ingredients

1 can (7 oz. ) chipotles in adobo sauce
1 can (6 oz.) frozen limeade concentrate, thawed
1/3 tsp. cayenne pepper
3/4 tsp. onion salt
1/3 cup apple cider vinegar
1 qt. mayonnaise
3/4 cup clover honey
1/2 cup yellow mustard
1/3 cup vegetable oil

Steps

  1. In blender, combine chipotles in adobo sauce, limeade, cayenne pepper, onion salt and cider vinegar; blend until peppers are smooth and completely pureed. Set aside.

  2. Place the mayonnaise, honey, mustard and vegetable oil into a mixing bowl; mix well with a wire whisk until smooth and thoroughly incorporated.

  3. Pour contents of blender into mayonnaise-honey mixture in mixing bowl. With wire whisk, mix together until well blended. (Do not mix the two mixtures in the blender or sauce/glaze will be too thin.)

  4. Refrigerate sauce and use within 1 week.

Yield: 2 quarts
