This mini-quesadilla is a perfect snack or appetizer. The use of chicken breast and reduced-fat dairy keep the dish relatively healthy.

Ingredients

1 6” flour tortilla
1 oz. low moisture part skim mozzarella cheese
2 oz. boneless skinless chicken breast
Mrs. Dash No-Salt Seasoning
1 oz. chopped iceberg lettuce
1 oz. light sour cream
1 oz. tomato salsa
1 oz. avocado

Steps

1.  Spray light coating of pan spray on grill. Lay flour tortilla on grill, add shredded mozzarella. Cook until cheese is melted and tortilla is golden brown on bottom.
2.  In the meantime, grill chicken breast, approximately 2 minutes on each side, or until it reaches internal temperature of 165°F.
3.  Assemble cooked chicken on top of melted cheese on tortilla. Sprinkle with Mrs. Dash no salt seasoning. Cut into 4 equal pieces.
4.  Place on plate with bed of lettuce, with 1 ounce each of avocado, light sour cream, and salsa.
