Chicken & Pineapple “Fried” Rice

Give standard chicken fried rice some life by adding pineapple, bell red pepper and green onions with this recipe.
Ingredients
3 qt. hot water
2 boxes Uncle Ben’s Asian-Style Brown Rice
31/4 lbs. skinless, boneless chicken breast, fully cooked, large dice, kept warm
52 oz. pineapple chunks, packed in 100% juice, drained
26 oz. red bell pepper, diced
26 oz. frozen diced carrots, steamed, kept warm
2 cups green onions, chopped
Steps
1. Combine hot water and contents of rice seasoning packet in deep, full-sized steamtable pan. Stir well to disperse seasoning in water. Add rice and mix well.
2. Cover and bake in preheated 400°F conventional oven for 25 mins., or until most of water is absorbed.
3. Stir rice well. Fluff with fork prior to portioning to obtain maximum yield.
4. Add rest of ingredients. Stir well. To serve, portion 1 ½ cups rice onto plate or bowl.
