At this 13-unit grilled cheese concept, chef Fish creates unique twists on the comfort-food favorite. Here, he sandwiches fried chicken between maple-flavored waffles with Sriracha butter and cheddar cheese. Vegetarian customers can opt for fried tofu in place of chicken.
 

Ingredients

2 waffles
1 oz. Sriracha butter
2 slices Cheddar cheese
½ chicken breast
Flour for dredging
4 oz. crispy batter
Oil for deep frying
3½ oz. maple syrup, warmed

Steps

1. Add waffles to the flattop and heat for 45 seconds on both sides. Spread Sriracha butter on 1 waffle. Add a slice of Cheddar to both waffles; set aside.
2. Heat oil in deep fryer to 350 F. Dredge chicken in flour; coat with crisp batter. Place battered chicken in hot oil and cook until it reaches an internal temperature of 165 F. Remove chicken from fryer; drain.
3. Place waffles on sheet tray and heat in salamander for 45 seconds until cheese is completely melted. Layer chicken on waffle without Sriracha butter. Close waffle sandwich and insert toothpick. Serve with warm maple syrup.
