A simple dish made out of great ingredients, this cheese plate is sure to please. The Pear-Fig Chutney adds a truly special touch.

Ingredients

1 oz. camembert
1 oz. banon (soft goat cheese), wrapped in chestnut leaves
1 oz. manchego cheese
1 oz. blue or gorgonzola cheese
Toasted brioche and raisin bread
Honeycomb pieces
Pear-Fig Chutney (recipe below)

Pear-Fig Chutney:
1 tbsp. vegetable oil
1 cup chopped onion
3 pears, peeled, cored, and cubed
6 tbsp. brown sugar
1⁄2 cup chopped dried figs
3 tbsp. apple cider vinegar
2 tbsp. fresh lemon juice
1 tbsp. chopped peeled fresh ginger
1, 2-in. cinnamon stick
Salt and pepper, to taste

Steps

Arrange cheeses with breads, honey, and chutney on plate.

Pear-Fig Chutney:

1. Heat oil in saucepan. Add onion; sauté 5 min. Stir in remaining ingredients; bring to a boil.

2. Reduce heat to med.-low; simmer 30 min., until pears are tender and mixture thickens.

3. Discard cinnamon; cool chutney and chill, if desired.

Yield: About 2 1⁄2 cups.
