Make the perfect roast beef in just one hour with this simple recipe from Harvard University, in Cambridge, Mass.
1 lb. + 6 oz. knuckle meat
4 9/59-oz. portions chopped garlic in oil
¾ tsp. kosher salt
½ tsp. ground black pepper
Preheat oven to 325°F.
Season meat with garlic, salt and pepper, and place beef in roasting pan.
Cook for approximately 1 hour, or until internal temperature reaches 125°F.
Let sit for 20 to 30 minutes before slicing.
Cut beef into big strips and place on skewers.
