Callaloo is a popular Caribbean dish, which is served in different ways across the Caribbean. This version features garlic, tomatoes, cocnut milk, thyme and allspice.

Ingredients

2 red onions, sliced thin
2 tbsp. butter
6 cloves Christopher Ranch garlic, peeled, chopped
4 plum tomatoes, large dice
3 bunches callaloo greens or Swiss chard, washed, cut into large pieces
11⁄2 cups coconut milk
1 bunch thyme, stems removed, chopped fine
Pinch ground allspice
2 tbsp. lime juice
Kosher salt and black pepper to taste
 

Steps

1. In large sauté pan, sauté onions in butter until soft. Add garlic and tomatoes, and sauté for 2 minutes.

2. Add greens, coconut milk, thyme, allspice and lime juice. Simmer until greens are soft and cooked through and liquid is slightly reduced, about 15 minutes.

3. Season to taste with salt and pepper. Serve with jerk chicken or pork.
