Focaccia is great bread but is made even better with the addition of sweet carmelized onions and fennel. The delicate licorice flavor of the fennel shines through.

Ingredients

2 cups olive oil
2 tsp. salt
Pizza dough, for 8, 6-in. pizzas
1 cup fennel, sliced and caramelized
3⁄4 cup red onions, sliced and charred
1 tbsp. dried rosemary
 

Steps

1. Divide oil and salt into two large metal bowls. After the pizza dough rises once, work fennel, onions and rosemary into dough and divide into 2 balls. Place dough in bowls, set aside and rise until dough is tripled in size, about 4 hr.

2. Transfer dough to two sheet pans. Spread dough out to about 12 x 18-in. and 3⁄8-in. thick. Pour remaining oil over top, cover and set aside for 1-11⁄2 hr. Bake until golden brown, about 20 min.

3. Serve focaccia sandwiches with sliced chicken, gorgonzola, cream cheese and lettuce.
