To create a healthier alternative to a traditional meatloaf, Salvatore Cantalupo, corporate chef for Corporate Image Dining Services in Samford, Conn., decided to make a meatloaf with a Cajun twist.

“We have been making an effort to look at all our recipes and see how we can maintain the flavor but impart a healthy twist to it,” Cantalupo says. “With this recipe I switched from ground beef to ground turkey, and it has gone over extremely well.”

The recipe also features Tabasco sauce, cayenne pepper, onion, green peppers and Worcestershire sauce for that extra kick.

Ingredients

10 lb. ground turkey
1/2 cups celery, diced
1/2 cups onion, diced
1/2 cups green pepper, diced
1 tbsp. garlic, minced
1 cup ketchup
1 tsp. Tabasco sauce
2 tbsp. Worcestershire sauce
1 tsp. cayenne
1/2 tsp. nutmeg
1 tsp. cumin
2 tsp. salt
2 tsp. black pepper
4 oz. butter
6 cups bread crumbs
2 cups milk
5 each eggs

Steps

1. Sauté celery, onion, green pepper, green onion and garlic in butter. Cook until translucent.
2. Add ketchup and seasonings. Cook until mixture comes to boil.
3. Remove from heat and cool down. Combine turkey, eggs, milk, bread crumbs with cooked mixture.
4. Form turkey meatloaf into loaves. Bake in bullet pans at 325°F until internal temp. reaches 160°F.
