You can't have too many versions of fried onion rings. Always a favorite appetizer, this recipe has a good blend of spices and a great dipping sauce.

Ingredients

1 cup buttermilk
1 1⁄2 tsp. cayenne pepper
1 1⁄2 tsp. salt
1⁄2 tsp. black pepper
1⁄4 tsp. oregano
1⁄8 tsp. thyme
1⁄8 tsp. cumin seed, crushed
1 large sweet onion, ends removed, peeled and thickly sliced
Seasoned flour
Oil for frying
Dipping sauce (see note), as desired

NOTE: For dipping sauce, combine 1⁄2 cup mayonnaise with 2 tsp. each ketchup and horseradish; season to taste with paprika, oregano, salt, and pepper.

Steps

1. Combine buttermilk with cayenne, salt, pepper, oregano, thyme, and cumin; mix well. Soak onion in
buttermilk mixture; remove and dredge in seasoned flour. Refrigerate to set.

2. Fry onions in 350°-375°F oil until crisp and golden brown. Drain and serve immediately with dipping sauce.
