Ham is soaked in seasoned mustard-bourbon glaze for three hours before searing and cooking through on the grill.

Ingredients

1 cup yellow mustard
1 cup bourbon
2 tbsp. cracked black pepper
1 tsp. kosher salt
2 tsp. dried tarragon leaves
2 tbsp. Worcestershire sauce
2 tbsp. chopped shallots
1 (10-lb.) boneless ham (Japanese-style kurobuta ham preferred )
 

Steps

1. In baking dish, whisk all ingredients except ham. Add ham and coat with mixture. Cover with plastic and refrigerate 3 hr., turning occasionally.

2. Place ham on preheated grill and sear on all sides. Reduce heat to lowest setting; cook ham 10 min. per lb. or until heated through.

3. Let rest before slicing.
