Mixologists are eagerly raiding the kitchen to create cocktails with fresh fruits and herbs. This non-alcoholic sparkler follows the same culinary inspiration. Chef Samuel crafts a simple syrup infused with lavender, lime and honey, then adds blueberry juice to make a base. Club soda and fresh blueberries complete the house-made soda.

Ingredients

1 cup simple syrup
1/4 cup lime juice
1 tbsp. honey
2 tsp. grated lime zest
1 tsp. lavender
2 cups blueberry juice
2 cups club soda
1/2 cup fresh blueberries

Steps

  1. Prepare blueberry base: Combine simple syrup, lime juice, honey, zest and lavender in small saucepan; bring to a boil. Remove from heat and chill.

  2. Stir blueberry juice into syrup mixture until well blended. Chill completely and strain through a colander.

  3. For service, pour 3 oz. chilled blueberry base into tall chilled glass; add 4 oz. soda. Garnish with blueberries.
