These mouth-watering fritters combine black beans and corn with intriguing flavors. The golden brown and delectable fritters are served with a red pepper mayonnaise.

Ingredients

1 1⁄2 cups flour
1⁄2 cup yellow cornmeal
1 tbsp. baking powder
1 tbsp. sugar
2 tsp. chili powder
1 1⁄2 tsp. ground cumin
2 large eggs, lightly beaten
1 cup milk
2 tbsp. fresh chives, snipped
1 cup corn kernels, blanched
1 red bell pepper, diced, blanched
1 10-oz. can black beans
40 shrimp, peeled, deveined
2 cups red pepper mayonnaise
Fresh cilantro, as needed
Lime wedges, for garnish
 

Steps

1. In a large bowl, sift together dry ingredients.

2. In a separate bowl, mix together eggs, milk, chives, and vegetables.

3. Combine liquids with dry ingredients; stir in black beans.

4. Heat oil in heavy skillet. Fry fritters until golden. Serve with red pepper mayonnaise, sautéed shrimp, cilantro, and lime.
