Black beans, peppers and a spiced-up Southwest Lime Vinaigrette create dynamic flavors in this healthy side dish.

Ingredients

1 qt. quinoa
2 10-lb. cans black beans, rinsed, drained
2 1/2 lb. tomatoes, small dice
2 green peppers, small dice
3 red peppers, small dice
3 red onions, small dice
12 scallions, white and green parts small sliced
3 fresh jalapenos, finely diced
2 oz. finely chopped garlic
1 bunch cilantro, chopped
2 cups Southwest Lime Vinaigrette, prepared
1/3 cup lime juice
1/3 cup extra virgin olive oil
1 tsp. chili powder
2 tsp. coriander
2 tsp. cumin
Kosher salt and black pepper to taste

Steps

  1. Cook quinoa; cool.

  2. Add black beans, tomatoes, peppers, red onions, scallions, jalapeños, garlic and cilantro to cooled quinoa.

  3. Add lime juice, olive oil, chili powder, coriander and cumin to prepared Southwest Lime Vinaigrette.

  4. Fold vinaigrette into quinoa mixture. Salt and pepper to taste.
