Sweet butternut squash and filling beans make for a well-rounded vegetarian burrito.
Ingredients
6 lb., 6 3/4 oz. peeled butternut squash
3 1/3 cups, 1 tbsp., 1 1/2 tsp. canned black beans
2 lb. 9 1/8 oz. canned refried beans
13 3/4 oz. fine chopped onion
2 1/2 tsp. cumin seed
3/4 tsp. ground cinnamon
2 1/2 rounded tsp. granulated salt
30 tomato tortilla wraps
3 1/3 cups, 1 tbsp., 1 1/2 tsp. salsa
2 lb. 9 1/8 oz. shredded cheddar cheese
1 lb. 11 1/2 oz. diced part skim mozzarella cheese
13 3/4 oz. canned diced green chili peppers
Steps
Steam squash until cooked through.
Mix squash with beans, spices and onions.
Fill each tortilla with #8 scoop of filling.
Top burritos with salsa, cheese and green chilies.
