This distinctly flavored burger is blackened with Cajun spices and topped with blue cheese. Bacon and avocado add to the appeal of this bold burger.

Ingredients

1 cup mayonnaise
2 tbsp. roasted red pepper puree
Cajun blackening spice blend, as needed
2 2⁄3 lb. ground chuck
1 1⁄2 cups blue cheese,crumbled
8 onion rolls, sliced and toasted
16 strips smoked bacon, fried crisp
2 avocados, sliced
8 lettuce leaves
8 red onion slices
8 tomato slices
Garlic-parmesan fries, as needed
Cole slaw, as needed
8 dill pickle spears
 

Steps

1. In a small bowl, combine mayonnaise, roasted red pepper puree and 1 tsp. blackening spice mix. Season and reserve.

2. With your hands, form beef into 1⁄3-lb. patties. Coat liberally with blackening spice and grill to desired doneness. Top with 2-3 tbsp. blue cheese and melt under a broiler.

3. Spread onion roll with seasoned mayonnaise. Place burger on roll, top with 2 bacon slices and 4-5 avocado slices. Add lettuce, tomato and onion, and serve with garlic-parmesan fries and cole slaw. Garnish with pickle spear.
