Classic fish ’n chips will never go out of style. The crunchy coating on the fish and the crisp fries make for a textural and taste treat. At the Publik Draft House, the special batter for the fish incorporates one of the bar’s signature draft beers—Sweetwater 420. Accompanied by a tall frosty glass of the same, it’s an irresistible combo.

Ingredients

5 cups flour
4 cups beer (Sweetwater 420)
½ cup peanut oil, plus more for frying
2 tbsp. salt
1/4 tsp. cayenne pepper
3 lb. cod fillets
French fries

Steps

  1. In large bowl, combine flour, beer, ½ cup peanut oil, salt and cayenne; whisk until well blended. Refrigerate at least 1 hr. to chill.

  2. Heat peanut oil in deep fryer until it reaches 350°F. Dip cod fillets in batter and shake off excess. Fry fish in hot oil 5 min. until deep golden brown.

  3. To serve, sprinkle fish with sea salt and accompany with fries.
