Soaked in a savory marinate, these cubed beef dippers deliver small bites on a small budget.

Ingredients

3/4 cup vegetable oil, divided
2 tbsp. chopped garlic
2 tbsp. grated ginger ½ cup madras curry powder
3 cups smooth peanut butter
3 cans (about 15 oz. each) coconut milk
1/2 cup fish sauce
1/2 cup sugar
Salt and pepper, to taste
4 1/2 lb. Australian beef top sirloin, cut in 1-in. cubes

Steps

 

  1. Heat 1 tbsp. oil in large sauté pan. Add garlic and ginger; sauté 2 min. Add curry powder; reduce heat to low and cook 1 min. 

  2. Add remaining oil, peanut butter, coconut milk, fish sauce, sugar and salt and pepper to taste; stir well and simmer satay sauce 10 min.

  3. Let sauce cool. Transfer half the sauce to large, shallow container; add beef and marinate several hours. Reserve remaining sauce for dipping. 

  4. For service, place 3 beef cubes on soaked bamboo skewer. On a hot flat top, sear beef on each side until med. doneness. Serve with reserved sauce.
