Baked Feta Cheese with Roasted Grapes

YIELD: 1 appetizer to serve 6

 1 ½ cups red and black seedless grapes
1 Tbsp. olive oil
1-2 tsps. balsamic vinegar
1 lb. block of feta, sliced in half
1-2 Tbsps. fresh thyme
1 tsp. dried oregano
red pepper flakes, to taste
drizzle of olive oil

1.    Preheat oven to 400°F. Toss grapes with olive oil and balsamic vinegar to coat, then place on baking sheet. Bake for 10-15 minutes, just until grapes begin to soften. Remove from oven and rest in pan for 5 minutes.
2.    Place halves of feta into ovenproof dish. Sprinkle with herbs and red pepper flakes, then drizzle with olive oil. Top with roasted grapes. Bake about 10 minutes, or until cheese has softened. Serve with crusty slices of bread.
