These juicy patties offer flavor in every bite. From the crunch of the peppers to the hint of shrimp, these patties are perfect for any event.
Ingredients
2 cups cooked black beans
Salt to taste
1 bunch cilantro
1 red onion
1 red pepper
1 yellow pepper
2 jalapenos
2 tbsp. ginger
4 tbsp. lime juice
3 eggs
1 cup breadcrumbs
1 tsp. light chili powder
¼ tsp. cayenne
1 tsp. roasted cumin powder
1 tsp. Amchur (dried mango powder)
Oil to fry
16 shrimp, 16/20
Steps
Boil black beans in salt and water until soft.
In blender, blend beans, cilantro, onion, peppers, jalapenos, ginger and lime juice.
Mix a mixture by adding eggs, breadcrumbs and spices.
Divide mixture and mold in with shrimp in center.
Pan-fry and serve hot.
Yield: 8 2.5-ounce patties
