Burgers made of bison meat have been a menu signature at Ted’s Montana Grill since it was founded 15 years ago. The Avalon burger, one of the chain’s best sellers, blends sweet and salty flavors with a hint of pepper. The sweetness comes from onions that have been caramelized with bacon, while blue cheese and melted Gruyere lend a salty edge to the recipe. Housemade roasted garlic aioli and crisp arugula complete the layering of flavors and texture.

Ingredients

8 oz. ground bison
Salt and pepper, to taste
1 tbsp. olive oil
1 small onion, thinly sliced
2 tsp. brown sugar
1½ oz. Gruyere cheese, shredded
1/4 oz. blue cheese
2 strips bacon, cooked crisp
1 burger bun
1 tbsp. roasted garlic aioli
Arugula leaves
Parsley leaves

Steps

1. Loosely pack ground bison into a patty and season to taste with salt and pepper; set aside.
2. In skillet over medium-low heat, heat olive oil. Add onion and cook until all moisture evaporates. Reduce heat to low; cook 15 minutes longer until caramelized. Stir in brown sugar and heat until melted.
3. Cook burger to desired doneness on griddle or grill. When cooking is nearing completion, top with Gruyere cheese and blue cheese; cook until melted. Add caramelized onions and bacon on top of melted cheese.
4. Place burger with toppings on bottom half of bun. Spread 1 tbsp. aioli on top bun; add arugula and small piece of parsley before placing top of bun on burger.
